This was a great all in one dish! Everyone loved it and the flavor was fantastic. By using the fat free salad dressing it was a yummy low fat dish. A keeper for sure!
4 Boneless Skinless Chicken Breasts
16 Ounce Bottle of Italian Dressing (I used non fat)
1/2 Cup of Parmesan Cheese
Italian Seasoning
4-6 Potatoes scrubbed cut in half or wedges (you can peel if desired)
1/2 bag of mini carrots
Spray crock with Pam
Squirt a small amount of Italian dressing at bottom of crock-pot.
Place two chicken breasts in crock.
Pour some of the Italian dressing on the chicken.
Sprinkle half of cheese onto the chicken.
Sprinkle Italian seasoning onto the chicken.
Place next two chicken breasts into crock-pot, if possible not directly on top of the first breasts.
Sprinkle remaining cheese on top of chicken.
Pour carrots on top
Pour more of the Italian dressing on top of chicken and carrots.
Sprinkle Italian seasoning onto the chicken and carrots.
Place potatoes on top.
Pour the remaining Italian dressing on the potatoes.Sprinkle Italian seasoning on the potatoes.Cook on low for 6-8 hours.
This looks so yummy and EASY! Thank you for making my life a little less hectic after coming home from work. Definitely trying this tomorrow!

ReplyDeleteI typically put my chicken in frozen. My crock pot seems to overcook things if left in too long. The frozen meat seems to help.

You can use frozen but just cook it an extra hour or two. I try to avoid cooking on high because I find that chicken gets really dried out. I so glad you guys like the blog. It has been so much fun!

ReplyDeleteWith the spices although you could use either one. I just sprinkled it on no set amount.

ReplyDeleteItalian seasonings can be found in the spice aisle of your local grocery store. They come in several different brands including McCormick and Trader's Choice.

ReplyDeleteThis didn't work out for me :( I cooked it on low for 8 hours and the chicken came out dry and the veggies were too acidic and soaked. I wasted a lot of food ;-(

ReplyDeletePaulina - Usually more veggies and less Italian dressing helps me when that happens. They supply extra moisture without upping the zestiness quotient. I might try this and add some zucchini. That ought to keep it nice and moist!

ReplyDeleteI've made this 4 times now and love it! It's perfect as a meal to deliver to friends. The one thing I found is that it's very different with a light dressing. Not nearly as tasty (but expected, I suppose). I hope you don't mind, but I linked to it on my blog littleolsen.blogspot.com. I've had friends asking for the recipe, so I sent them your way. :)

ReplyDeleteWhat Italian dressing are you using. What I used was far too strong. It may have separated during cooking.? My husband is not too picky and even he didn't like it. Looks so good I want to try it again with a better dressing. Do you use a creamy dressing verses regular Italian?

We've all had a nasty flu bug, and I'm hoping a good home cooked "mommy meal" will help everyone feel better. However, being sick myself I sure didn't feel like being in the kitchen. ReplyDeleteI did not have success making this, i used Kraft brand dressing which I use as a marinade often and love it. The chicken had a weird texture from all the acid in the dressing and everything had a strange flavor from the bottled dressing. Any suggestions on a different brand?
ReplyDeleteBased on previous comments I'm confused as to the Italian dressing that is being used for this. Is it powder? I bought actual liquid dressing in a bottle. This dish is cooking as I type this. It smells amazing btw. I was also, curious about the chicken frozen or thawed?
ReplyDeleteI made this recipe tonight and after 8 hours on high my veggies were under cooked but my chicken was awesome. If I make it again I may consider putting the potatoes in the middle and carrots on top.

ReplyDeleteCan't wait to try it--- never thought about putting the chicken in frozen. That actually would helpful- 1. We put everything together the night before when making lunches so we just have to drop in the crock pot when getting coffee and remembering to pull out the chicken TWO days before is sometimes- too much! LOL. and 2. We start the crockpot at 6:45 AM and aren't ready to eat until 5:00 (or 7:00 PM for hubby) and sometimes things dry out.... THANKS!
ReplyDeleteif i were to put the crock pot on high how long would it have to cook for? i saw this earlier on pinterest but it wouldnt let me look any further and i finally found it now after getting everything i need to make this. my chicken is almost thawed out. is there any way i can make the cook time faster? i am new to cooking. only been coking for a few months and this will be my first time with the crock pot. any tips would be greatly appriciated.

ReplyDeleteI used regular Kraft Italian dressing and that was the overwhelming taste. It was like drinking dressing right from the bottle and I couldn't eat the dinner at all.
ReplyDeleteI made this yesterday using frozen chicken and Wishbone Italian dressing. I only used half a bottle and added some water when the dressing had soaked into everything. It was so delicious!! I gave the recipe to my mother and she made it today with the same delicious turnout! Thanks for the great recipe!
ReplyDeleteI plan on using lowfat dressing to tone down the Italian dressing flavor and I'll probably par-boil the potatoes just a smidge before adding them to the crockpot because I like them to be fall-apart soft. I can't wait to try this, it sounds so good!

ReplyDeletepotatoes do not freeze well even cooked. If you cook and mash them with sour cream or cream cheese you can freeze them.
ReplyDeleteI am not quite sure why people use frozen meats in the crockpot as it been proven that frozen meat does not get up to a safe temperature quick enough to ward off bacteria growth. Just my two cents.
Will grated parmesan work? Or is shredded the best?
